Vegan Chili
1.5 cups dry red beans,
2-3 red hot chilies (finely sliced),
2 plump sweet peppers (coarsely cut),
2 carrots finely sliced,
1 large onion ( diced)
garlic,
1tbsp tomato paste.
Soak beans overnight, then cook, and keep some of the liquid.
In a large skillet, heat vegetable oil , add onions and saute till soft, add chilies and cook 3 more minutes, add carrots and peppers, cook till peppers start sweating, add garlic and tomato paste, cook another 5 minutes, add beans with the liquid. cook another 10-15 minutes so the liquid reduces and peppers are tender but don't fall apart. Serve with rice.
